I made Cinnamon Cucumber Bread today…..


Yep! You read that right! I made Cinnamon Cucumber Bread, and it actually turned out amazingly delicious.  I know, I know, I know, you are thinking that there is no way that that can be good, but 14 out of 15 people who were my guinea pigs liked it!  That HAS to be considered a success! I did not tell anyone what the secret ingredient was before they tasted it, because I will be honest, I am the 1 person who did not like it, and I think it is because I can’t get over a cucumber being in my bread.  I’m a picky eater so I honestly didn’t think I was going to like it to begin with, but my fiancé and neighbors will try anything so I thought I would give it a whirl, what did I have to loose? I knew someone was going to like it!  Out of those 15 people only 1 person was able to guess what the secret ingredient was, only after you tell them that it is cucumber do they all go “oh, yeah, I can taste it now.” lol  Lisa’s grandson Jace even had some of it and liked it!


How did this recipe come about you wonder?  I had several large cucumbers in my garden that did not get picked in time to be good to eat and I did not want to throw them away, the only other recipe that I had was for refrigerator pickles and my fiancé and I do not like sweet pickles, so I crossed that recipe off my list to make. Now what? I jumped on to trusty ol’ Pintrest to see if they had anything that might appeal to us.  Lo and behold I found a Cinnamon Cucumber Bread Recipe from Been There Baked That Recipe Blog and I thought “well, if you can use zucchini why wouldn’t you be able to use cucumber?”  I had all the ingredients needed which was a plus, so I got everything out and started mixing!  I know I know I know, you are thinking there So lets get started! Cinnamon Cucumber Bread

2 cups grated, seeded and peeled cucumbers*
3 eggs
2 cups sugar
1 cup canola oil (I used Wesson)
2 tsp vanilla (my second batch I accidently put in tbsps. and liked people liked it better)
1-1/2 cups whole wheat flour **
1-1/2 cups flour**
1 tbsp cinnamon
1 tsp baking soda
1 tsp salt (I only used about a ½ tsp)
1/4 tsp baking powder

*When you grate your cucumbers there will be a lot of water that comes out, you will use that in your bread as well.  DO NOT throw out that part, it keeps the bread moist.

**If you do not like wheat flour you can just use the regular flour and put 3 total cups in.

In a large mixing bowl, combine all wet ingredients including cucumbers, with sugar and mix.


Once that is mixed, add in the rest of the ingredients gradually. Pour into greased pans, bake at 350 for 40-45 minutes. The amount of time in the oven will depend on the pans and stove you have them in.  It took my mini-mini loaves only 20 minutes to bake, my large loaf pans it took almost and hour and 15 minutes to bake.  Take a clean knife and poke it thru the middle of the loaf, if it comes out clean it is ready to remove from the oven, if not let it sit in the oven for a while longer, checking with clean knife ever so often. Remove from oven and let cool in pans for at least 15 minutes before removing, and ENJOY.


I hope you all like this recipe, it was something different and definitely a surprise! I never would have thought that cucumber bread would be such a hit with everyone.
